Banana Nut Bread
¼ cup shortening
¾ cup sugar
2 eggs
2 cups Jiffy Baking Mix
1 cup mashed ripe banana (2-3 medium)
1/3 cup chopped nuts
Heat oven to 350º. Grease 9" x 5" loaf pan. Cream shortening and sugar. Combine remaining ingredients and mix until well blended. Pour into prepared pan. Bake about 55 minutes. Cool on rack before slicing. Yield: 1 loaf.
