Cranberry Fruit Mold (Elisabeth's)

 

2 cups boiling water

2 pkgs.(4 serving size) cranberry sugar-free gelatin

1½ cups cold ginger ale or water...

2 cups green and/or red seedless grape halves

1 can (11 oz.) mandarin orange segments, drained

¼ cup chopped celery


Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold diet? ginger ale. Refrigerate about 1½ hours or until thickened. Stir in grapes, oranges, and walnuts. Pour into 6-cup mold sprayed with no stick cooking spray. Refrigerate 4 hours or until firm. Serves 8.
