Salmon Croquettes

 

1 egg, slightly beaten

1½ cups seasoned fine dry bread crumbs

½ cup mayonnaise or salad dressing

¼ cup chopped onion

2 T. snipped parsley

1  14¾-oz. can salmon, drained, flaked, and skin and bones removed

¼ cup cooking oil

Tartar sauce (optional)


In a medium mixing bowl combine the egg, 1 cup of the bread crumbs, the mayonnaise or salad dressing, onion, and parsley. Add salmon to egg mixture and lightly stir to mix. Form mixture into 6, ¾”-thick patties (about 3½” in diameter) or 12, ¾”-thick patties (about 2” in diameter). Coat both sides of patties with remaining bread crumbs. In a large skillet cook patties in hot oil over medium-low heat for 4-6 minutes or until golden brown, turning once. Serve with tartar sauce, if desired. Makes 6 main-dish or 12 appetizer servings.
