Caesar Style Salad (Low Cal/Diabetic)

1/3 cup Land O’ Lakes sour cream
3 T. freshly grated parmesan cheese
1 T. lemon juice
1 t. finely chopped fresh garlic
1 t. anchovy paste
Dash of coarse ground pepper

1 small head Romaine lettuce, washed, torn
½ cup red onion, cut into 2” strips
1 cup Caesar-seasoned croutons


Stir together sour cream, 1 T. cheese, lemon juice, garlic, anchovy paste and pepper in small bowl; mix well. Cover; refrigerate at least 1 hour. Combine lettuce and onion in large bowl. Add dressing; toss to coat. Add remaining cheese and croutons; toss lightly. Makes 6 (1 cup) servings.
