Chili Con Queso

T. vegetable oil

cup minced onion

large Anaheim (New Mexico) chili, chopped

small chopped tomato
½
cup chicken broth

(16-oz.) pkg. shredded Monterey Jack/cheddar cheese
Heat oil in a medium saucepan over medium heat. Add onion, chili and tomato and cook until softened, 5 minutes. Add broth; bring to a boil. Reduce heat to low. Stir in cheese and cook until cheese is melted and mixture is smooth, 3 to 5 minutes. Serve immediately. Makes 1¾ cups.
