Easy Garden Casserole

1 cup chopped zucchini
1 cup chopped tomato
1 cup chopped onion
1 cup chopped green peppers
½ cup grated Parmesan cheese
½ cup Bisquick mix
1 cup milk
2 eggs
½ t. salt
dash of pepper

Heat oven to 400º. Lightly grease 8” square baking dish or 9” pie plate. Sprinkle zucchini, tomato, onion, pepper and cheese in pie plate. Stir remaining ingredients until blended. Pour over vegetables and cheese. Bake uncovered about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Yield: 6 Servings
