Crisp
Cheddar Wafers (low-fat)
½
cup Land O’ Lakes® butter, softened
6 oz. (1 ½ cups) deli Land O’ Lakes® cheddar cheese, shredded
3 T. water
1 t. Worcestershire sauce
Dash of salt
¾ cup all-purpose flour
¾ cup quick-cooking oats
3 slices bacon, crisply cooked, crumbled
Freshly grated Parmesan cheese
Combine
butter, Cheddar cheese, water, Worcestershire sauce and salt in large
mixer bowl. Beat at medium speed, scraping bowl often, until well
mixed (2 to 3 minutes). Add flour, oats and bacon; mix well. Shape
into 12” roll on plastic food wrap. Wrap; refrigerate until firm
(about 4 hours). Heat oven to 400°F. Cut roll into ¼” slices with
sharp knife. Place 1” apart onto ungreased baking sheets. Sprinkle
tops lightly with Parmesan cheese. Bake for 8 to 10 minutes or until
lightly browned. Immediately remove to cooling racks; cool slightly.
These wafers are best when served while slightly warm. Makes 4 dozen
wafers. TIP: Dough can be made ahead and refrigerated for 1
