Mini Meatloaves

1 lb. ground beef
1 (6-oz.) box Stove Top Stuffing mix - any flavor
1 cup water
½ cup BBQ sauce or katsup
½ cup shredded cheddar cheese

Preheat oven to 375ºF. Spray muffin tins lightly with nonstick spray. Combine meat, stuffing and water and mix well. Press evenly into 12 medium muffin sections. Make a deep thumbprint in each and add 1 T. of sauce in each indentation. Bake for 30 minutes then add shredded cheese. Cook for another 5 minutes just until cheese is melted. Cool slightly and serve.
