Cut stems from jalapeños. Scoop out seeds using sharp knife. Do not cut jalapeños in half. Stuff each jalapeño with crabmeat; set aside. Combine ¼ cup flour and next 4 ingredients; stir until smooth and set aside. Dip stuffed jalapeños in batter, dredge in flour-cornmeal mixture. Pour oil to depth of 2"-3" in deep fryer; heat to 375º. Fry jalapeños, a few at a time, 1-2 minutes until golden brown. Drain.
