Soak
beans in water overnight. Drain and add more water. Don't worry about
putting too much; it'll cook down (you will probably have to add more
as it cooks). Add onions, crab boil, and liquid smoke. If you use salt
meat, it can be put in at this point. Let the beans cook until they
begin to get soft, then add sausage and cooking oil and salt. When
beans are soft, begin mashing enough of them to turn the water into a
creamy sauce. When that happens, the beans are done. Serve over rice,
of course. Many people eat red or white beans with a side order of
fried fish, fried shrimp, sausage, or routeed beef.
