Enchilada Casserole

1½-2 lbs. hamburger

1 large onion

1 can enchilada sauce, mild

1 can Cream of Mushroom

1 can chopped peppers, mild

1 cup milk

1 lb. Longhorn cheese

1 packet taco seasoning mix

2 dozen corn tortillas

Brown meat and onion; drain. Add remaining ingredients to meat, except cheese and tortillas. Heat well. Spray 9 x 13 pan with Pam and line bottom with tortillas. Pour meat mixture (a third) over tortillas and sprinkle with cheese; cover with 8 more tortillas and add another third meat mixture and sprinkle with cheese. Repeat with 8 more tortillas, third meat mixture, and sprinkle with cheese. Bake at 350ºF for 45-50 minutes, or until cheese melts and is bubbling.
