Teriyaki
Beef Kabobs

½
cup soy sauce
¾ cup apple juice, thawed
3 T. cider vinegar
1 t. fresh ginger, grated (½ t. dry ginger)
3 T. sherry (optional)
2 cloves garlic, crushed
1 lb. flank steak, thinly sliced
1 med. onion, cut into 1” pieces
1 green pepper, cut into 1” pieces
8 (6”) skewers
Combine
first 6 ingredients in a small bowl or plastic zip sealed bag and set
aside. Place steak in a shallow glass dish and pour marinade over meat
(if you're using a plastic bag just add the meat to the bag, close bag
and turn a few times to cover all with marinade. Cover and refrigerate
for at least 1 hour. Remove meat from marinade and place alternately
with onion and green pepper on skewers. (discard remaining marinade).
Arrange skewers on broiling pan and broil for 10 minutes, turning
frequently. Serve with rice. NOTE: If using bamboo skewers soak them
in a pan of water for at least 30 minutes to an hour before using so
they do not burn. Yield: 4 serving of 2 each.
