Mini Meatloaves

1 lb. ground beef

1/3 cup quick oats, uncooked

1 egg, slightly beaten

2 T. lemon juice

2 T. grated onion

½ t. salt

¼ t. oregano

¼ t. thyme

3 T. catsup

1 T. brown sugar

1 t. fresh grated lemon peel

1 t. dry mustard

Cut six 6” circles of foil; press foil into 2½ x 4¼” muffin cups, letting foil extend above sides of cups. In large bowl, thoroughly combine all except last 4 ingredients. Shape into 6 balls. Press balls into foil-lined muffin cups; bake in preheated 375º oven for 25 minutes. Meanwhile, to make sauce, combine remaining ingredients; spoon sauce on top of baked meatloaves; bake 5 minutes longer.
