Cottage Meat Loaf

1½ lbs. ground beef

½ cup tomato ketchup

1/3 cup tomato juice

½ t. each salt & pepper

Dash red pepper

2 eggs, beaten

¾ cup fresh bread crumbs

¼ cup finely chopped onion

2 t. mustard

¼ cup tomato ketchup

½ t. mustard

2 t. brown sugar


In large bowl, combine ½ cup ketchup, tomato juice, salt, peppers, eggs, bread crumbs, onions and 2 t. mustard.  Mix until thoroughly blended.  Add ground beef.  Mix gently but thoroughly.  Line a 9 x 5” loaf pan with foil. Press in beef mixture.  In a separate bowl, combine ¼ cup ketchup, ½ t. mustard and brown sugar, mixing well.  Spread topping over the meat loaf.  Bake at 400ºF for 35-45 minutes, or until done.  Drain off fat.  Rest meatloaf 5 minutes before serving.  MAKES 5-6 SERVINGS.
