Chicken Enchilada Casserole

1 chicken, broiled & deboned

2 cups grated cheddar cheese

1 cup Monterey Jack cheese

1 can Cream of Mushroom

1 soup can of broth from boiled chicken

1 cup chopped onion

1½ chopped jalapeno peppers

6 corn tortillas


Mix chicken with soup, broth, onions and peppers in bowl.  Mix cheeses together.  In a 9 x 12” pan, place 2 corn tortillas on bottom as first layer, chicken mixture as 2nd layer, and top with cheese.  Repeat layers until all tortillas are used.  Cover with foil and bake at 350ºF for 1 hour.  Remove from oven and let sit for 15 minutes covered.  Serve.
