Coating for Oven-Fried Chicken

1 T. butter

2/3 cup Bisquick baking mix

1½ t. paprika

1¼ t. salt

¼ t. pepper

2½-3½ lb. chicken, cut up


Heat oven to 425º.  Line rectangular pan, 13 x 9 x 2”, with foil.  Heat butter in pan in oven until melted.  Mix baking mix, paprika, salt and pepper; coat chicken.  Place skin sides down in pan.  Bake uncovered 35 minutes.  Turn; bake until done, about 15 minutes longer.  MAKES 6 SERVINGS. Italian Coating:  Mix in 1 T. Italian Seasoning and ½ t. garlic powder with the baking mix. Mexican Coating:  Decrease baking mix to ½ cup.  Mix in 2 T. cornmeal and 1-2 T. chili powder. Oriental Coating:  Omit paprika and pepper.  Mix in 3 T. sesame seed, 1 T. soy sauce, 1 T. grated lemon peel, 2 t. parsley flakes and 1½ t. garlic powder with mix.
