King Ranch Chicken

1 med. onion, chopped

1 med. green pepper, chopped

3 t. butter

2 cups chopped tomatoes

1 can Cream of Mushroom

1 can Cream of Chicken soup

1/3 cup Pace Picante sauce

12 corn tortillas in 1” strips

2½-3 cups diced cooked chicken

3 oz. shredded cheddar


Cook onion and green pepper in butter until onion is tender but not brown.  Remove from heat.  Add tomatoes, soups, picante sauce and chili powder; mix well.  Line bottom of shallow 3-quart casserole with half the tortilla strips.  Top with half the chicken and half the vegetable mixture.  Repeat layers.  Sprinkle with cheese.  Bake uncovered at 350ºF for 35 minutes.  Let stand 10 minutes before serving.  MAKES 6-8 SERVINGS.
