1 med. onion, chopped
1 med. green pepper, diced
¼ cup butter
2 cups diced cooked potatoes
2 cups diced chicken
½ cup Pace picante sauce
1 t. ground cumin
½ t. salt
1 cup shredded Monterey jack or
cheddar cheese
Cook onion and pepper in butter in 10” skillet until onion is tender but not brown. Add potatoes, chicken, picante, cumin and salt; mix well. Simmer 5 minutes, stirring occasionally. Top with cheese; cover skillet to melt. Serve with additional picante sauce. MAKES 4 SERVINGS.
