Quick Chicken Dinner

1 cup elbow macaroni, uncooked

1 med. carrot, thinly sliced

1 med. celery, sliced

2 T. finely chopped onion

1 t. Wyler’s chicken bouillon

1 (8-oz.) can cream-style corn

¾ cup shredded Monterey Jack cheese, divided

2 T. milk

½ t. seasoned salt

Dash pepper

1 boneless chicken breast, skinned & split

1 t. parsley flakes


Prepare macaroni according to package directions, adding next four ingredients during last 4 minutes of cooking time; drain.  In small casserole, combine macaroni mixture, corn ½ cup cheese, milk, seasoned salt and pepper; mix well.  Arrange chicken on top.  Sprinkle with parsley flakes.  Cover and bake in 350º oven for 30 minutes.  Sprinkle with remaining cheese.  Bake, uncovered, until chicken is cooked through, about 10 minutes longer.  MAKES 1-2 SERVINGS.
