Skillet Chicken & Noodles

1 T. vegetable oil

4 skinless, boneless chicken breast halves (about 1 lb.)

1 small onion, sliced

1 (10.5-oz.) can Condensed Chicken Broth

2 cups uncooked egg noodles

½ cup water

½ t. dried basil leaves

Dash pepper

1 (16-oz.) pkg. frozen vegetables

1 T. grated Parmesan cheese


In 10” skillet over medium heat, in hot oil, cook chicken and onion 10 minutes or until chicken is browned on both sides.  Remove; set aside.  Spoon off fat.  In same skillet, combine broth, noodles, water, basil and pepper.  Heat to boiling.  Arrange chicken on top of noodles; top with vegetables.  Cover and cook 10 minutes or until noodles and vegetables are done and chicken is no longer pink, stirring occasionally.  Remove chicken.  Transfer noodles and vegetable mixture to serving platter.  Arrange chicken on top.  Sprinkle with cheese.  MAKES 4 SERVINGS.
