Chicken with Peach Salsa

 

Salsa Ingredients:

2 fresh peaches (1 cup), chopped
1 T. granulated sugar
2 T. sliced green onions
2 T. chopped fresh parsley
2 T. chopped jalapeno pepper

Chicken Ingredients:

4 (4 oz. each) boneless skinless chicken breasts
˝ t. salt
Dash of pepper
3 T. Land O’ Lakes® Butter


Stir together all salsa ingredients in small bowl. Cover; refrigerate at least 1 hour. Sprinkle chicken breasts with salt and pepper. Melt butter in 10-inch skillet; add chicken breasts. Cook over medium heat, turning once or twice, until chicken is no longer pink (15 to 20 minutes). Continue cooking, turning and coating chicken with butter, until heated through. Serve chicken with salsa. Makes 4 servings.
