Southwestern Style Swiss Steak

1½ lbs. chuck steak, cut ½” thick

½ t. salt

¼ t. pepper

¼ cup flour

2 T. vegetable oil

2 lg. onions, sliced & separated into rings

2 cups sliced carrots, cut ¼” thick

2 garlic cloves, minced

1 (16-oz.) can tomatoes

½ cup Pace Picante

½ cup beef broth

2 T. chopped cilantro


Cut meat into serving pieces; sprinkle with salt and pepper.  Pound all the flour into meat, using meat mallet.  Heat oil in heavy, large skillet; brown meat on both sides.  Arrange onions, carrots and garlic over meat.  Pour tomatoes, Pace and broth over all.  Cover tightly and simmer until meat is tender, 50-60 minutes.  Remove meat to serving platter.  Cook sauce over high heat until reduced and thickened, 5-7 minutes.  Pour over meat; sprinkle with cilantro.  Serve with additional Pace.  MAKES 6 SERVINGS.
