Green Rice

1 Cup Scallion Chopped

¾ cup bell peppers, cubed

3 T. extra virgin olive oil

1 cup long grain white rice

¼ cup fresh snipped parsley

3 cups chicken broth

Dash of salt

½  t. fresh cracked pepper

1 medium fresh jalapeno, minced

2 cloves garlic, minced

½ cup snow peas [optional]


In large skillet or saucepan, heat olive oil on medium-high heat; add bell peppers, onions and garlic. Cook until golden brown. Mix in rice, chicken broth, parsley, salt, pepper and jalapenos. Combine ingredients well. Pour rice mixture into large 2-3 quart baking dish. Preheat oven to 350ºF and bake covered for 40-45 minutes. Fluff with fork and serve with green pasta. This rice dish is best served and eaten with chopsticks. Nutritional Info: Serving Size – 6; 205 calories per serving; 7G fat.
