Zesty Lemon Shrimp & Pasta

 

 

6 oz. uncooked dried penne pasta
2 T. Land O’ Lakes® butter
1 medium (1 cup) red bell pepper, cut into thin strips
1 t. finely chopped fresh garlic
˝ lb. (about 15-17) fresh medium raw shrimp, peeled, deveined
3 T. lemon juice
˝ to 1 t. grated lemon peel
Freshly grated Parmesan cheese, if desired
Chopped fresh parsley, if desired
Salt and freshly ground pepper to taste


Cook pasta according to package directions. Drain. Meanwhile, melt butter in 10-inch skillet until sizzling; add red pepper strips and garlic. Cook over medium heat, stirring occasionally, until peppers are crisply tender (2 to 3 minutes). Add shrimp and lemon juice; cook, stirring constantly, until shrimp turn pink (1 to 2 minutes). Add cooked pasta and lemon peel; toss lightly. Sprinkle with Parmesan cheese and parsley, if desired. Season to taste with salt and pepper. Makes 3 servings.
