Tex-Mex Stew

2 lbs. ground beef

2 lg. minced garlic cloves

3 T. vegetable oil

1 (28-oz.) can whole tomatoes

1 cup picante sauce

1 t. ground cumin

1 (17-oz.) can whole kernel corn

1 (15-oz.) can pinto beans

8 green onion with tops, sliced

Salt & pepper to taste


Brown meat with garlic in oil in Dutch oven; drain.  Drain and coarsely chop tomatoes, reserving juice.  Add tomatoes, juice, picante, cumin, salt and pepper to meat mixture.  Bring to boil; reduce heat.  Cover and simmer 20-30 minutes.  Add corn (drained), beans (drained), and onions; continue cooking, uncovered, 10 minutes.  MAKES 6-8 SERVINGS (about 10 CUPS) stew.
