Fresh Apple Walnut Cake

3 cups all-purpose flour

1 t. baking soda

1 t. ground cinnamon

½ t. salt

3 apples - peeled, cored & sliced

1 cup white sugar

1 cup brown sugar

1¼ cups vegetable oil

2 eggs

2 t. vanilla extract

1 cup chopped walnuts


Preheat oven to 350º F (175º C). Grease and flour a 9x13” pan. Sift together the flour, baking soda, cinnamon and salt. Set aside. Combine the apples and the white sugar; set aside. In a large bowl, mix together the brown sugar, oil, eggs and vanilla. Stir in the apple mixture, then the flour mixture. Fold in the walnuts. Pour batter into prepared pan. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Makes one 9 x 13” pan.
