Jell-O Dessert (Maggie Jones)

1 large box Raspberry Jell-O

1 Large can Crushed Pineapple (drain and keep juice)

cup chopped pecans

1 (12-oz.) container of Cool Whip or LaCreme (Best)

1 (8-oz.) cream cheese, softened

1 cup pineapple juice

1 t. lemon juice

cup sugar

2 T. flour

2 eggs (beat well)


Make Jell-O like directions & mix with pineapple & nuts, chill and set. Mix cream cheese with container of Cool Whip.  Take half and spread over the top of set Jell-O. Mix rest of ingredients (mix sugar & flour first).  Cook over medium heat, stir constantly till thick  (burns easily).  Let cool. Spread this over the other mixture of Jell-O layers, then spread the rest of cool whip cream cheese mixture over top and sprinkle with nuts. Hide in the refrigerator until you are alone to eat it all!
