Easy Coconut Custard Pie

 

 

2 cups milk
1 cup sweetened flaked coconut
¾ cup granulated sugar
½ cup all-purpose flour
3 T.  butter, melted
4 large eggs
1 t. vanilla extract
Freshly grated whole nutmeg
Cut-up fresh fruit (berries are especially nice)


Heat oven to 325°F. Place milk in 5-cup blender container; add all remaining ingredients except nutmeg and fruit. Cover; blend at medium speed until well mixed (1 to 2 minutes). Pour egg mixture into greased and floured 9” pie plate or pan; sprinkle with nutmeg. Bake for 40 to 50 minutes or until knife inserted in center comes out clean. Serve warm or chilled with fresh fruit. Store refrigerated. Makes 8 servings.
