Hoppin' John & Greens

1½ lbs. dried black-eyed peas

Water

1 (13-oz.) can beef broth

2 lg. smoked ham hocks

2 onions, chopped coarse

2 bay leaves

1½ lbs. mustard greens, wash, remove stems, tear

2 cups uncooked long-grain rice

½ t. hot pepper sauce


Sort through the peas; discard any stones.  In large saucepan, place peas and 8 cups water.  Bring to boil over high heat; reduce heat and simmer 2 minutes.  Remove pot from heat; let stand, covered, 1 hour.  Drain and discard water.  To pot, add broth, ham hocks, onions, celery, bay leaves and 6 cups water.  Bring to a boil over high heat.  Reduce heat; simmer, partially covered, 30 minutes.  Stir in greens; bring to a simmer.  Cook 20-30 minutes, stirring occasionally, until peas are soft.  Meanwhile, cook rice according to package directions.  When peas are done, stir in rice and pepper sauce. 12 SERVINGS.
