cup granulated sugar
1/3 cup butter
1 large egg
2 T. vanilla extract
2 (1-oz.) squares unsweetened baking chocolate, melted, cooled
¾ cup all-purpose flour
¼ t. baking powder
½ cup salted peanuts, coarsely chopped*
½ cup white baking chips
Heat oven to 350°F. Combine sugar, Soft Baking Butter with Canola Oil, egg and vanilla in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; stir in melted chocolate. Add flour and baking powder; beat until well mixed. Stir in chopped peanuts and white baking chips by hand. Drop dough by rounded teaspoonfuls 2” apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until set. Let stand 1 minute; remove from cookie sheets. Makes 2½ dozen cookies. *Substitute ½ cup coarsely chopped pecans or walnuts.
