Quick Hoppin' John

22/3 cups water

2/3 cup chopped onion

1 t. salt

½-1 t. red pepper sauce

22/3 cups uncooked instant rice

2 (15-oz.) cans black-eyed peas

6 slices bacon, crisply cooked & crumbled

Heat water, onion, salt and pepper sauce to boiling in 2 quart saucepan.  Stir in rice; remove from heat.  Cover and let stand about 10 minutes or until liquid is absorbed.  Stir in peas and bacon.
