cup granulated sugar
3 T. cornstarch
½ cup water
1 cup crushed peeled peach
1 (3-oz.) package cream cheese, softened
1 (9”) baked pie crust
5 cups sliced peeled peaches
2 T. lemon juice
Stir together sugar and cornstarch in a heavy medium saucepan. Gradually stir in water and crushed peaches. Cook over medium heat, stirring constantly as the mixture thickens; let it come to a boil and continue cooking and stirring for 1 minute. Remove from heat and set aside to cool. In a mixing bowl, beat cream cheese until smooth. Spread in bottom of baked pie crust. In a separate bowl, toss peaches with lemon juice and spread evenly over cream cheese mixture; pour cooked peach mixture on top. Refrigerate for 3 hours, or until set. Makes 8 servings.
