Cornbread Dressing (Mama's)
2 packages Korn
Kits
5 slices stale
bread
1 onion,
chopped
4-5 stalks
celery, chopped
Green onion
tops, chopped
4-5 hard-boiled
eggs, chopped
1 jar
pimientos, chopped
2 t. poultry
seasoning
3 cans chicken
broth and juice from turkey
Salt &
pepper to taste
3 beaten eggs
Bake large pan of
cornbread and break up in bowl; add broken bread. In butter, sauté celery and bulbs of shallots.
Cut up and add shallot bottoms and parsley.
Add seasonings, broth and eggs.
Bake in 9 x 13” pan (covered with foil) at 375º until middle
is done and top is brown (about 1 hour).
NOTE: If
you plan to stuff the turkey with it, do not stuff it until you are
ready to put the turkey into the oven.
