Peach Muffins Imperial

1½ cups all purpose flour

¾ t. salt

½ t. soda

1 cup granulated sugar

2 well-beaten eggs

½ cup salad oil

1¼ cups fresh or drained

canned peaches

½ t. vanilla

Dash almond extract

½ cup almonds, chopped


Combine flour, salt, soda and sugar.  Make a well in center of dry ingredients.  Add eggs and oil.  Stir only until dry ingredients are moistened.  Stir in peaches, vanilla, almond extract and nuts.  Measure 1/3 cup batter for each muffin.  Bake at 350º for 20-25 minutes, or until muffins test done.  Yields 12 muffins.  Cooking tip:  For Peach Bread, spoon batter into one 9” loaf pan.  Bake at 350º for 1 hour, or until bread tests done.
