n' Savory Stuffing

T. olive oil
1 stick butter, softened
1 bay leaf
4 stalks celery
1 large yellow onion, chopped
3 apples, chopped
salt & pepper
3 T. poultry seasoning
¼ cup chopped fresh parsley
8 cups cubed stuffing mix
2 to 3 cups chicken stock
Preheat
oven to 375º. Preheat a large skillet over medium high heat. Add
olive oil to skillet and 4 tablespoons butter. Add bay leaf and add
the vegetables. Sprinkle the vegetables with salt, pepper and poultry
seasoning. Cook 5 to 6 minutes until vegetables and apples begin to
soften, then add parsley and stuffing cubes to the pan and mix.
Moisten the stuffing with chicken broth until all of the bread is soft
but not wet. Butter a casserole dish with remaining butter and add
stuffing after removing bay leaf. Bake 15-20 minutes until crisp on
top. Yield: 8 Servings
