Mini Cheesecakes

Graham Cracker crumbs

2 (8-oz.) pkgs. cream cheese

¾ cup sugar

3 eggs

¾ cups sour cream

2 T. sugar

1 t. vanilla


Grease 36 muffin tins (teacake size) with butter.  Dust with cracker crumbs (3 full-size).  Combine cream cheese, sugar and egg yolks.  Beat until thick, then fold in beaten egg whites.  Spoon into pans and bake at 350º for 15 minutes (centers will fall slightly).  Combine sour cream, sugar and vanilla.  Put 1 t. on top of each cake; return to oven for 5 minutes more.  Cool completely before removing from pan.  Put strawberry or cherry preserves on top or cherry pie filling.  Refrigerate.
