Every good thing given and every perfect gift is from above, coming down from the Father of lights, with whom there is no variation or shifting shadow. (James 1:17)

Banana Nut Cake (Mama's)

4 cups flour

1 scant cup butter

2½ cups sugar

4 eggs

2 t. vanilla

2 t. baking soda

1 t. salt

3 medium bananas, mashed

½ cup buttermilk

1 cup ground pecans

Mix butter, eggs, sugar and vanilla; add buttermilk and bananas.  Sift together dry ingredients and set aside.  Grease and flour 7½ x 3½ x 2½” pans.  Add dry ingredients to butter mixture.  Fold in pecans.  Start spooning into pans evenly (start with about 3 heaping tablespoons in each).  Bake at 350º for 40-45 minutes.  Let cool completely before frosting.  FROSTING:  Make a thin paste with hot water, powdered sugar, and a drop of vanilla.  Drizzle over top of each cake.  May decorate with greed and red maraschino cherries and a pecan half.  MAKES 6 CAKES.
