Red Earth Cake

1 cup all-purpose flour

¾ cup rolled oats

1 cup brown sugar

1½ t. ground cinnamon

½ cup butter, melted

4 cups peeled, cored and sliced apples

1 cup slices fresh strawberries

½ cup white sugar

1 T. cornstarch

½ cup water

Mix soda and buttermilk and let stand while you cream oleo (at room temperature) with sugar and eggs.  Sift flour with cocoa and salt.  Mix alternately with milk mixture and add coffee, coloring and vanilla.  Bake in ungreased 13x9x2” pan in 350º oven for 40 minutes.  Ice cake while in pan. ICING: Sift 1 cup sugar with cocoa and add to butter, coffee, vanilla and food coloring.  Continue to add sugar until reaching desired spreading consistency.
