Coke Salad (I LOVE this!!!)

(3-oz.) packages Cherry Jell-o

(8-oz.) Coca Colas

oz. cream cheese (softened)

(15-oz.) cans black bing cherries

cup chopped pecans or pecan pieces

cup shredded coconut
Cream
the cream cheese and set aside. Drain
juice from cherries and add enough water to juice to make 2 cups of
liquid. Bring juice to a boil. Wisk in gelatin and stir until well
dissolved, cooking on low heat for about 2 minutes. Place pot in freezer
for about 10 minutes, or until cool. Add Cokes to Jello liquid and stir
into cream cheese. Stir in cherries, coconut, and nuts. Pour into
Pyrex dish and chill until firm. Makes approximately 6-8 servings (maybe
more).
