Salmon Lemon Loaf

1 1-lb. Can salmon
1 t. lemon rind
2 T. lemon juice
½ cup chopped onion
¼ cup chopped bell pepper
1 t. sugar
dash black pepper
dash hot pepper sauce
1½ cups soft bread crumbs
2 eggs, slightly beaten
¼ cup liquid from salmon


Drain salmon; reserve liquid.  Flake salmon and combine with lemon rind, lemon juice, onion, bell pepper, pepper sauce, bread crumbs and egg.  Moisten with salmon liquid.  Spoon into an oiled, quart-size loaf pan.  Bake at 350º for 35-40 minutes.  Garnish with lemon slices.
